<p>Preparar lagarto na panela de pressão é algo bem comum aqui em casa, dessa vez cortei a grande peça de lagarto em fatias grossas para garantir uma carne ainda mais macia e suculenta, sem contar na diminuição do tempo de preparo que é ainda mais fácil por conta da redução do tamano dos pedaços de carne.</p>



<p>A utilização da panela de pressão para cozinhar lagarto traz uma série de benefícios. Primeiramente, o tempo de cozimento é consideravelmente reduzido, o que é uma vantagem para quem tem uma rotina agitada e não pode passar horas na cozinha. Além disso, a alta pressão da panela ajuda a amaciar a carne do lagarto, deixando-a suculenta e macia. Outro benefício é a preservação dos nutrientes e sabores, já que o cozimento rápido impede a perda excessiva de vitaminas e minerais.</p>

<h2 class="wp-block-heading">Preparando o lagarto para o cozimento &#8211; fatiando e temperando</h2>



<p>Antes de começar o cozimento do lagarto na panela de pressão, é importante preparar a carne adequadamente. Comece fatiando o lagarto em pedaços médios, para que o cozimento seja uniforme. Em seguida, tempere a carne e se tiver tempo, deixe pelo menos 10 minutos com o sal e a pimenta para que absorva os sabores do tempero.</p>



<h3 class="wp-block-heading">Selando o lagarto com uma crosta de farinha para aumentar a maciez e o sabor</h3>



<p>Uma técnica que pode ser utilizada para deixar o lagarto ainda mais macio e saboroso é selar a carne com uma crosta de farinha antes de cozinhá-la na panela de pressão. Para isso, tempere o lagarto com sal e pimenta e em seguida, passe-o na farinha de trigo, cobrindo bem toda a superfície. Aqueça a panela de pressão com um pouco de óleo ou azeite e doure as peças do lagarto em todos os lados, é importante fazer isso aos poucos para não esfriar a panela com a sobrecarga, faça em varias levas e depois de dourar reserve a carne pronta fazendo assim a proxima leva até acabar. Em seguida, transfira-o para a panela de pressão e siga o restante do processo de cozimento. A crosta de farinha irá ajudar a selar os sucos da carne, deixando-a ainda mais suculenta e saborosa.</p>
