<p><span style="font-family: Georgia, 'Times New Roman', serif;">Alguns leitores me pediram sugestões para uma ceia sem produtos de origem animal. Topei o desafio e pesquisei bastante coisa, e como vi que para as opções de acompanhamento é bem fácil adaptar, foquei no prato principal. Passeei pela carne de caju, de jaca e confesso que fiquei super curiosa para fazer estas experiências. Mas acabei optando pelo shitake pois acho que estas &#8220;carnes&#8221; precisam da fruta num ponto específico e nem todo mundo teria condições de encontrá-las. Geralmente o cogumelo que se usa neste tipo de receita é o portobello, que é enorrrrme. Outra regra é que se use o shitake fresco, que eu concordo que é mais gostoso, mas como sei que é mais difícil de encontrar, arrisquei usar o seco e posso dizer que o resultado ficou excelente! <p class="">Se você acha que um estrogonofe sem carne é apenas um prato &#8220;sem graça&#8221; feito para quebrar o galho, prepare-se para pedir desculpas aos cogumelos.</p>



<p class="">A grande estrela desta receita não é um cogumelo fresco qualquer que solta água e some na panela. Nós vamos usar o <strong><a href="https://amzn.to/4kMxZKp">Shiitake Seco</a></strong>. O processo de secagem concentra os sabores de uma forma tão intensa que cada pedacinho ganha uma textura &#8220;carnuda&#8221; e um sabor profundo, amadeirado e cheio de <em>umami</em> (aquele sabor saboroso e viciante que preenche a boca).</p>



<p class="">E a melhor parte? Como não temos ketchup ou mostarda nesta versão minimalista e elegante, o sabor é construído através da caramelização da cebola, do toque salgado e escuro do <strong>shoyu</strong> e do aroma sofisticado do <strong>conhaque</strong> flambado.
