<p class="">Vamos falar a verdade: o bacalhau é o rei das datas comemorativas, mas pode ser um ingrediente caro. Qual é o segredo para fazer meio quilo de bacalhau render uma refeição épica para toda a família sem perder a majestade? <strong>O Arroz de Forno.</strong></p>



<p class="">Mas atenção, não estamos a falar daquele arroz de forno seco e sem graça. Esta receita é uma explosão de texturas! Imagine camadas de arroz soltinho envoltas num molho absurdamente cremoso de requeijão, lascas de bacalhau desfiado refogados no azeite, o toque adocicado do pimentão vermelho e, para coroar, uma crosta dourada de queijo derretido coberta com batata palha estaladiça.</p>



<p class="">É o prato perfeito para a Páscoa, para o Natal ou para aquele almoço de domingo onde você quer impressionar sem passar horas na cozinha. É reconfortante, indulgente e, acredite, o cheiro que vai invadir a sua casa é indescritível!</p>

<p class="">A magia aqui acontece na mistura de ingredientes do dia a dia com a nobreza do bacalhau.</p>

<li class=""><strong>Bacalhau Desfiado e Dessalgado:</strong> O grande protagonista.

<li class=""><em>Dica de Ouro:</em> Comprar o bacalhau já desfiado e dessalgado poupa horas de trabalho. Se comprar salgado, lembre-se de demolhar em água fria na geladeira (frigorífico) trocando a água várias vezes.</li>

<li class=""><strong>Arroz Cozido:</strong> A base do nosso prato. Arroz de ontem (dormido na geladeira) é perfeito aqui, pois os grãos estão mais firmes e não vão virar papa quando misturados ao creme.</li>



<li class=""><strong>Requeijão:</strong> É o que vai dar a textura molhadinha e cremosa. <em>(Para os leitores em Portugal: o requeijão brasileiro é muito diferente do português. Pode substituir por queijo creme tipo Philadelphia.</em></li>



<li class=""><strong>Queijo Muçarela Ralado:</strong> Metade vai para o meio do arroz para dar aquela &#8220;puxada&#8221;, e a outra metade vai por cima para gratinar em portugal pode substituir pelo queijo flamengo.</li>

<h2 class="wp-block-heading">Desfiando o frango para a receita:</h2>



<p>Bem, essa dica está por todo lado, antes de conhece-la eu desfiava o frango com o garfo, pegava uma parte do peito, segurava com um grafo e com o outro &#8220;raspava&#8221; o frango no sentido da fibra, até terminar todo o frango cozido.</p>



<p>Não me lembro ao certo onde, só me lembro de ter visto essa dica em muitos lugares diferentes:</p>



<ul class="wp-block-list">
<li>Ao terminar de cozinhar o frango, retire a pressão e escorra a agua do cozimento ( na maioria das vezes eu guardo essa agua para preparar caldos, descarte caso não utilize)</li>



<li>Depois de escorrer toda a água, feche novamente a panela de pressão, sacuda a panela por uns 30 segundos vigorosamente.</li>



<li>Depois disso, abra a panela, verifique se está bem desfiado, caso contrário, feche novamente e sacuda um pouco mais.</li>
</ul>



<p>Simples assim, terá o frango desfiado para seguir a receita. Costumo cozinhar vários peitos de frango na panela de pressão com água e sal, depois aplico esse metodo para desfiar e congelo em pacotes de 500g. Assim tenho sempre carne de frango cozida e desfiada para casos assim, reformar um <strong><a href="https://pitadinha.com/receita/arroz-de-forno-com-frango/">arroz</a></strong>, preparar uma <a href="https://pitadinha.com/receita/torta-de-arroz-e-atum/">torta</a> ou utilizar como <a href="https://pitadinha.com/receita/recheio-de-frango-cremoso/">recheio</a>.</p>
